Popular British celebrity chef Jamie Oliver Always promoting veggie-forward and budget-friendly recipes. Her new post on Instagram promises another recipe you might want to bookmark for a weekend or even a weeknight meal — a vegan shepherd’s pie.
The British Classic Dish Shepherd’s Pie is a delicious pot pie made with minced meat and topped with mashed potatoes. It’s usually made with beef or lamb, but Jamie gave it a vegan spin for veganism. “This is a batch-cook shepherd’s pie that’s full of the good stuff. It’s warming, cozy and vegan!! Trust me, you’ll love it,” she wrote in the post. Using frozen veggies and canned chickpeas, it comes together in no time. Here’s how to make it:
Vegan Shepherd’s Pie
Ingredients:
Olive oil, 2 tbsp
Chopped rosemary, two sprigs
Garlic, chopped, two cloves
mushroomRoughly chopped, one cup
Frozen vegetables, 500 grams
Red wine, one glass
Chickpeas, one can
Lentils, one can
Sun-dried tomatoes, 12
Veggie stock or water, 400 ml
Potato mash made with 1.5 kg potatoes

Procedure:
* Heat a pan and pour olive oil.
*The next step is adding chopped rosemary and garlic
*Coarsely chop one cup of mushrooms and add them later.
* One tablespoon of coriander powder.
*Add a whole bag (500g) of frozen vegetables. Let it fry like this for about five minutes.
*Go in with a glass of red wine. Jamie adds to make sure the wine is vegan, as some wines use animal products in their production process. Check the label.
*For protein, Jamie recommends a can chickpeas and lentils. Add them later.
*For some sweetness, add chopped sun-dried tomatoes next.
* Add vegetable stock or water.
* Pour the whole thing into a large bowl or container.
* Top the dish with a thick layer potato filling.
* Bake in the oven for 30-45 minutes until the potatoes are golden brown.
* Cool a little before serving.
Pro tip: A pie can last for days if you want to prepare a meal with it.
